America's Eating Habits: Changes and Consequences AgEcon
Individual chapters in this book provide different perspectives on the nutrition problems in the United States: what are the economic costs associated with unhealthy eating patterns; how do dietary patterns compare with dietary recommendations; how do national income and prices, advertising, health claims, and trends in eating away from home affect nutrient intake; how much do people know about nutrition and how does nutrition knowledge and attitudes affect intake of fats and cholesterol; how do different government programs and regulations influence food expenditures and consumption; what are some public and private efforts to improve healthy eating; and what are potential impacts of healthier eating on domestic agriculture.

Consumer preferences for country-of-origin and health claim labelling of extra-virgin olive-oil AgEcon

Although several studies have investigated consumer preferences for olive oil country-of-origin labelling (COOL), very little is known on consumers’ preferences for new health claims (EC Reg. n. 1924/2006). This paper aims to analyse the introduction of these attributes, providing more insights into Italian consumer perception and preferences for different extra-virgin olive oil labelling schemes. Health is an increasingly important topic in the food market. The regulation (EC) No 1924/2006 on nutrition and health claims is meant to facilitate healthy food choices of consumers. “Pick the Tick” The Impact of Health Endorsements on Consumers’ Food Choices AgEcon

To determine the efficiency of health-related endorsements in influencing consumer choice we report findings from two separate, unique discrete choice experiments (DCEs) involving fresh packaged beef steaks and seafood. In addition to quality and production-related attributes, the beef and seafood products also displayed a health endorsement: the Australian National Heart Foundation “Pick the Tick” certification. Another, more recently introduced health claim, “2 Serves a Week” was also included in the seafood experiment. Consumer awareness of the “Pick the Tick” certification was higher than any other extrinsic claim considered in the experiments. As consumer preferences rapidly evolve with respect to health-related attributes of food, many have questioned the performance of the conventional food industry to fulfill new demand. As the structure of the industry has shifted toward conditions where retailers have access to and incentive to respond to rapidly changing information concerning consumer preferences, it is relevant to consider the conditions under which retailers will offer private labeled healthy food products not available from national brand manufacturers. The Value to Consumers of Health Labeling Statements on Breakfast Foods and Cereals AgEcon

Food manufacturers have an incentive to include nutrient content claims, health claims, or other types of labeling statements on foods if they believe that consumers will be willing to pay more for products with specific attributes. We estimated semi-log hedonic price regressions for five breakfast bar and cereal product categories using Nielsen ScanTrack scanner data for 2004 and found that labeling statements for these foods are often associated with substantial increases in consumer willingness to pay. The largest effects were associated with “carb-conscious” carbohydrate labeling (reflecting the time period of the data), followed by fat and sugar content labeling statements.

When more is less: the effect of multiple health and nutritional labels in food product choice AgEcon

Consumers are facing increasing information on health and nutritional aspects of foods, an important source of which is that presented in food packages. Prior research has identified that this information is positively valued, but the effect of multiple information items simultaneously is not so well understood. A choice experiment has been conducted to identify the effect of multiple health and nutrition information sources in two products which represent both a healthy and less-healthy food (pork Frankfurt sausages and plain yoghurt respectively).
